I love to eat, and I love to eat healthy. I grew up natural and organic before it was cool, as in we imported our grain from Colorado to grind the wheat ourselves to make whole wheat bread. I know, another level right? Well all that healthy eating growing up totally shaped what I love now, I crave edamame and lentils like its my job.
This dip is one of our favorites, its packed full of spinach and cannellini beans with a healthy shot of lemon and garlic. I normally double the recipe and we eat it all week.
Its such an easy way to get tons of nutrients and its delicious. Win win in my book.
