Easy lunch recipe / healthy burritos

Its easy during the week to eat unhealthy for lunch. I try to put in some time over the weekend to get lunches ready for the week. Making a big bowl of something that we can eat on all week makes it easier to make sure we are staying on track. One of my favorite lunch meals is a healthy burrito. I mix brown rice, black beans, corn, rotel and chicken together and then grab a whole wheat burrito and salsa and you are ready to go.


  1. Ok this is genius! We always struggle with what to eat for lunches. Sandwiches get old after awhile.
