lemon roasted potatos

I put lemon on everything. I mean, everything. I buy the big bags of Trader Joe's lemons every week no lie. I made these Lemon Roasted Potatoes for the 4th and we demolished them.  They taste like candy.
(disclaimer, I never measure anything)
I pored about 1/4 a cup of olive oil in a roasting pan and put my cut up baby potatoes in the pan and tossed to coat. Lots of rosemary salt, half of a chopped onion and some dried italian spices. Then I squeezed 2 lemons over it (be warned, this is very lemony the way I like it but adjust accordingly. Then I cut up another lemon and nestled the slices in with the potatoes. Roasted the potatoes at 425 for about 40 minutes total until they were soft, using a fork to toss them every 10 minutes or so. I added some fresh basil toward the end too. We had this on the side of roasted chicken and edamame and it was such a good summer dinner.
