After all the yummy holiday eating the past few months we have been leaning more toward lighter dinners and salads are frequenting the menu. Its been so cold I've been craving some warmth and this is one of my favorite winter salads, with lots of protein from the cannelini beans and shrimp. Serve with a toasted baguette and done.
We have been using this shrimp from trader joes and its delish. Just grill or saute individual shrimp skewers.
Warm Cannelini bean and shrimp salad (serves 2)
1 or 2 trader joes thai lime shrimp skewer per person ( I think there are 5 skewers per box)
1 can cannelini beans
For the dressing:
red wine vinegar
salt and pepper
Grill or cook on a skillet the shrimp skewers. In a small skillet, saute cannelini beans with olive oil and salt and pepper for about 5 minutes. Add arugula and chopped red onion to a plate, layer with sauteed cannelini beans and salt and pepper. Add the shrimp and dressing.
To make the dressing:
I never really measure but its about a 1 to 4 olive oil to vinegar ratio... and the juice of one lemon, lots of salt and pepper. Try this as you go along for ratio, I like mine with a lot of vinegar and lemon juice.
