our favorite couscous recipe / easy lunch

We love us some couscous around this house. I make this ALL the time and we take it for lunches, or spoon some in a tortilla with hummus. YUM. 

Easy Mediterranean Couscous 

- far east couscous cooked like box recommends. I use the whole box for this recipe and like making mine with chicken broth
- 1 onion,diced
- 1 can black beans, rinsed and drained
- I can cannelini beans, rinsed and drained
- 1 bell pepper, diced
-1 cup frozen corn kernels, thawed
-1 package feta
-cucumber... more bell pepper. Throw whatever you have in there!

Toss all the veggies and couscous together. Make the dressing. I never measure this but its about 4 tablespoons EVOO, 1 to 2 tablespoons red wine vinegar, juice of one lemon and salt and pepper. Beware, I like my dressing super lemony and with lots of vinegar so taste test and add more EVOO as needed.  Mix up and put over couscous. Add feta.
